Equipment and Supplies

  • 1 head of red cabbage
  • Medium-sized saucepan
  • Water
  • Strainer or cheesecloth
  • Several small jars or clear cups
  • Acidic and basic household items for testing (e.g., lemon juice, vinegar, baking soda solution, black coffee, soapy water, seltzer or soda)
  • Optional: pH strips or coffee filters to create DIY indicator strips
  • Printable worksheets or a science journal

To start, chop or tear the red cabbage into small pieces and place it in a saucepan with enough water to cover. Bring to a boil and let simmer for 5-10 minutes. Turn off the heat and let it steep for an additional 20-30 minutes. Strain out the purple liquid and pour it into jars for use as a natural pH indicator.

Choose common kitchen liquids and add them to your test jars. Witness the color change and record the results. Basic liquids will turn the purple indicator green or yellow, neutral liquids will remain purple or blue, and acidic liquids will turn the indicator red or pink.

Note: Prior to starting, encourage students to make a hypothesis about what the result will be if each substance is an acid or base. Available pH strips or coffee filters may be used to make DIY indicator strips if desired. When working with different liquids, always exercise caution and supervise children, as this experiment is not meant for consumption.

The red cabbage indicator is based on the compound anthocyanin, which reacts to pH levels and changes color depending on whether it's mixed with an acid or base. By experimenting with various liquids, students will learn about the pH scale, chemical indicators, and observable color changes caused by acids and bases.
