Use ripe peaches for canning. They'll be firm with a little give, but no green remainder on the stem area.
Syrup for Canning Peaches

- Medium syrup (extra sweetness) – 2-1/4 cups of sugar with 5-1/4 cups of water for a 9-pint load; 3-3/4 cups of sugar with 8-1/4 cups of water for a 7-quart canner load.
- Juice (Instead of plain water or sugar syrup) – Choose apple juice, white grape juice, or pineapple juice. It's said that white grape juice has the least impact on flavor. Most people prefer unsweetened fruit juice, but it's safe to use sweetened too. You can dilute it with water as well.
- Honey or maple syrup – For a different twist, substitute sugar with honey or maple syrup. You'll need about 2/3rds the amount of honey or syrup compared to sugar.
Canning Peaches
Ready to get your can on? Here's a simplified step-by-step for canning peaches at home:
- Prepare jars and canner – Wash jars and lids in hot, soapy water. Fill jars with water, place them in a water bath canner, and fill it with water. Heat them up while you prepare the recipe.
- Peel and slice peaches – Score the bottoms of the peaches with a shallow x, then boil them for 1-2 minutes to loosen the skin. Remove them from the boiling water and cool them down before peeling off the skins. Slice the peaches, remove the pits, and pack them into jars.
- Prepare syrup and heat peaches – Prepare your chosen syrup and add the peaches, boiling them for 2 minutes.
- Pack jars – Ladle the hot peaches into the hot jars, add syrup, remove air bubbles, and ensure proper headspace.
- Process jars – Place the jars back in the canner, ensuring they're covered by at least 1 inch of water. Boil, process pints for 20 minutes, and quart jars for 25 minutes.
